Our vineyards reached a balance this season, with improvements that we had been showing since the previous season. From a climate perspective, in addition to having almost no late frosts, 2019 recorded warmer maximum temperatures and colder minimum temperatures compared to historical data. This great thermal amplitude achieved a notable presence of fruit flavors in the wines. The two heat waves in January, typical of Mendoza, provided concentration to the musts that, with the natural acidity that characterizes our vintages, produced excellent and very elegant wines in this vintage.

100% Bonarda grapes from our own organic vineyard with vines, located in Luján de Cuyo (Mendoza) at 800 meters above sea level. The climate is semi-desert, with hot days and cool nights. The soil is of alluvial origin with deep horizons, with a fine silt-sandy texture, which favors good drainage. They are soils characterized by allowing deep root development and promoting a fresh root ecosystem. Its moisture retention capacity favors extensive root exploration and therefore better resistance to the heat waves common in the Mendoza summer. It is a soil that has a presence of less than 10% of coarse elements (stones) which is why we call it a “fresh” soil.

Manual harvest, the Bonarda grapes were pressed upon arrival at the winery, which is why they owe their pink color. The base wine was fermented at temperatures between 13ºC and 15ºC, with native yeast and without any acidity correction. Foam collection was carried out using the Charmat method. The second fermentation lasted 20 days, at temperatures between 12ºC and 15ºC. Contact on lees for 3 months, to promote aromatic complexity and achieve greater structure in the mouth.

La Liebre en Marzo invites you to sit at its table and share this sparkling wine, made 100% with Bonarda grapes, of great pleasure and a little madness. It has a soft salmon color – a better location would be a river trout color – with golden flashes (and some flashes of sanity) and fine bubbles. The nose is intense and very expressive, excessive, showing citrus and floral aromas, with notes of orange blossom. In the mouth the notes of apricot stand out; It is a wine with tension and balanced acidity that provokes only funny, crazy-cute comments. It has good volume on the mid-palate and a refreshing finish that makes it very drinkable. Here among us, the hare finishes the bottle alone, crazy with content. Hurry up and enjoy your drink, serving it at a temperature between 8º and 10ºC.

A shorter harvest than others, but no less intense. It was a year marked by strong heat waves, a year in which physiological maturity was somewhat delayed with respect to organoleptic maturity. Our work in the vineyard allowed us to reach the desired alcohol and acidity just before the heat waves, preserving the fruit character and the tension of the skin of the berries. The season also had heavy rainfall, which threatened to delay the harvest. However, the rains stopped and opened a window, just in time, to harvest with optimal maturity and health. The cold weather of recent weeks gave the berries the necessary time to finish ripening and balance all their compounds. It was a vintage with great concentrations, colors and health, in which fruit and spices predominated.

100% Bonarda grapes from “Jardin de Hormigas”, our organic vineyard located in Paraje Altamira, Uco Valley (Mendoza), at 1200 meters above sea level. The vines are VSP trellised. The area has a semi-desert climate with hot days and cool nights. The soils there have an alluvial origin and moderately deep horizons, with a fine silty texture, and dissolved limestone.

100% manually harvested Bonarda grapes. The grapes were pressed immediately upon arrival at the winery, giving a lovely pink color. The wine was vinified with native yeasts in stainless steel tanks with a controlled temperature kept at 13-15º Celsius (55-59°F), and no acid corrections. The second fermentation was carried out using the Charmat method, in stainless steel tanks at 12-15º Celsius (54-59°F), and lasted 35 days. Aged on lees for 2 months, to foster aromatic complexity and achieve greater structure in the palate.
