Harvest

The 2025 vintage was like having two vintages in one. We had a very cold winter, and the Andes Mountains were loaded with snow, which provided water for the rest of the year. Spring remained cool, and then heat waves and rain in midsummer marked two different vintages. Given these conditions, we prioritized natural acidity and texture over phenolic ripeness and applied this decision through winery techniques. As a result, we finished harvesting 15 days earlier than usual in Mendoza. This allowed us to produce wines with energy, complexity, and longevity. The early harvest defined the character of the wines from this vintage.

Vineyard

100% Cabernet Franc grapes from a plot in our vineyard at El Hormiguero estate (Luján de Cuyo, Mendoza), which is completely certified organic. The area has a semi-desert climate with a wide range of temperatures between day and night. The plot is located in the northwestern part of the estate, very close to the first elevations of the Andes, which gave rise to the soils there. The soils are mixed: one quarter has sandy silt with scattered calcareous granite, and the other is 100% sandy silt. The vineyard is trellised.

Elaboration

Vinified in small concrete vats, at controlled temperature (20°C- 68°F), with 20% whole cluster in layers. The elaboration process lasted 20 days since the reception of the grapes. Extraction was minimal, with only one pumping over per day. The wine was also aged in concrete vats, receiving no oak treatment in order to preserve freshness and to represent a pure expression of the grape.

Tasting note

In this vintage, we once again produced this wine exclusively with grapes from our own vineyard in Luján de Cuyo, Mendoza. We worked towards creating an avant-garde Cabernet Franc, with a light style but also texture and body.

It has a translucent ruby-red color with steely hues. On the nose, the first aromas are spiced, with notes of white pepper, cardamom, anise, and green pepper. Then, notes of cassis, rosehip, cherry, and raspberry appear. The palate is very fresh and juicy, with a rich, fruity center. It has a balanced acidity that serves as the backbone for drinkability. The finish is full of fruit and pyrazine notes, very long and round. This is an ideal wine to pair with roasted red meats, mature cheeses, and spicy dishes.
